I'm looking to overclock my rig, but I'm a tad bit hesitant right now.

CPU: i5 9600k
GPU: 1060 6gb
MOBO: gigabyte z390 auros elite
RAM: 16gb ddr4 gskill 3000 hz
PSU: Corsair CX 600

My PSU is what scares me. Is that enough energy to overclock my rig for slightly better performance? Is it too big a risk because I've had it for over 5 years?

I wouldn't and I had one until recently and I didn't.
this unit is made for stock speeds, thinner wiring, cheaper parts, cheap. talking about the green labeled units being
entry level. if it were the new CX 650, overclock away its a much better unit.

i have the original cx though

With that you will want to replace (green label CX's are pretty bad) the newer green ones are better but still not what I would call "excellent" especially for overclocking.

As far as I know, 6 GB versions GPU won't be better for overclocking.
If your GPU is an 8GB version then it can be overclocked. And you will get the highest performance with a lower voltage.
No this isn't true you can overclock "most" cards regardless of memory size. My old GTX 660s overclocked and they were 2GB.
