pc build that will run 1080p 60/120 fps

Hello to anyone who is reading this. Lately I have been looking at doing a new build as my current system is about 6 years old. I'm looking at various parts and wondering if someone can provide some advice on a build I'm currently working on.

As the title says I'm looking to do a new build that will run the latest games at 1080p on high/ultra settings at 60 or 120fps but while not breaking the bank too much. The build will most like be late summer or later which means the potential for adding extra to the budget (which is around £750-£1000). I'm aware pricing may differ between now and then and that there may be better parts that would fit into my budget at time of order and build but I think I need sort of baseline to go on just now. The parts below are what I have in mind.

Overclocking is something I haven't done but would consider doing and also I'm not looking to stream or video edit, pretty much pure gaming rig. Longevity of the build would be great.

GPU - The GPU market is pretty terrible at the moment but what would I be looking at to get the most out of the system? 1060, 1070 or 1080? If a 1060 6GB is going handle my needs for a while then I might choose this due to pricing ofc but if there's a reason to choose another please let me know.

Storage - would this set up be good and also would an M.2 be worth looking at or would it be better on my wallet to stick with a normal SSD?
EVO 850 500GB £140 (for OS and main games) and a Seagate BarraCuda 1TB 3.5" Hard Drive 7200RPM £38.55(for general storage movies/music/documents/games not played as much)

CASE - This I'm unsure about, something that's got good cable management and airflow. Preferably white or black.

OS - WIN10, any links to website where I can get this for a good price would be appreciated

1060 6gb can not do 100 FPS in most recent AAA tiles with very high ultra settings, 1070 is needed.

At 1080p, a 1060 6GB should be able to handle most games just fine w/ 60FPS(not so much with 120). You would be better off getting a 1070. Although it would also depend on what games you are playing.
If you are going to play a game like Assassin's Creed Origins for instance, then you definitely want a 1070.

if you want to save some dollars your best bet right now is a pre built gaming pc -manufacturers like dell and lenovo or cyberpower avoided the cringe by mass buying these gpu /parts, dell inspiron 5675 VR is on sale right now -for the price of a CURRENT GPU you get a whole SETUP
