Hi,

I upgraded my CPU from a R5 1600 to 5600X and ever since my pc randomly crashes, screens go black and pc restarts. I already tried resetting CMOS, updated all drivers, checked if cpu was installed correctly and reapplied thermal paste (temps are below 60c while gaming).

Specs:
Asus prime b350 plus (latest bios installed)
R5 5600x
Gtx 1060 6gb
Corsair vengeance lpx 16 ram
Corsair cx600m psu

8 years is getting up there for a psu, it could be as well that when the new cpu starts boosting and drawing power and could be pulling more than your 1600 did.

Corsair is good for power supplies, but when you shop I’d recommend trying to get one of their rm or rmx units as I believe those are better built units.

I upgraded my psu to a Corsair rm850x, but it's still happening. Could it be the CPU itself that is faulty? Don't know what else it could be.

It’s possible. I work as a tech and I think I’ve only ever seen 2-3 bad cpus, but it’s possible. You might download prime 95 and let it run for an hour or two and see if you get errors. Note that will heat your cpu up pretty well though. Just be aware. But if the board was stable before I would not necessarily leave towards the board. I suppose it’s possibly the bios flash didn’t go right or they didn’t program it right. The test would be to try that cpu in another pc.

You may also run memtest86 on it to see if you’ve got any errors on your ram.
