The SSD is not detected at all only the HDD is?
I can't get into windows at all, only if I do the boot override option it'll go into it but it isn't very stable and crashes after a while?

Every answer will be much appreciated!!!!!

1800x is 6-7 years old so I’m guessing the ssd may be going out. They aren’t very expensive so I’d say pick up another ssd. A 500gb or so shouldn’t run much, maybe about 50 bucks or so.

Also if this is a gaming pc, If you update the bios, upgrading your cpu to a 5700x or better, or even a ryzen 5 5600/5600x would be a HUGE improvement for you.

I've tried this with my old ssd and the outcome is the same, I've bought a brand new 990 pro in hopes of installing windows on it but when the setup needs to restart to finish the win10 installation this problem comes back up..

That's a good idea as well, might go for the 5800x since it's not that expensive as well, but the thing is my BIOS is currently on the latest version so I really don't know what causing this issue.

Considering age I would replace the bios battery.
While you are doing this do a hard BIOS reset.
Shut down.
Unplug power supply.
Press power on button several times.
Remove battery.
Press power button several times.
Jumper Clear CMOS/BIOS contacts or pins for at least ten seconds. Remove jumper.
Replace battery with new one and reassemble.
DISCONNECT SATA cable to 4 tb drive.
Boot to bios and enable bios defaults(F5)
insert windows USB.
Reboot.
Enter bios and set memory speed and check for SSD.
Set boot order to USB -SSD.

Reboot and install windows.
Now shut down and connect 4tb drive.

Good call. Also if you do update to a newer cpu on that board skip the 5800x and get either the 5700x or the 5700x3d or 5800x3d. The 5800x runs hot, but the 5700x has 90-95% of the performance but as I understand runs a lot cooler.

Thank you all for your answers and time! I've decided to return the SSD back to Amazon with the 2 sticks of RAM as well and build in the following weeks an AM5 system upgrade
