PC cuts off and restarts to black screen after playing different games for different amounts of time ?

https://pcpartpicker.com/list/V4KRy4 - The PC currently

I've tried:
Updating bios to newest
when I got my new pc it had no exhaust fans so I thought it was that I have new ones now temps seem of
removing external hard drive
I had an 850 watt power supply I upgraded to 1000W and made sure it was the new cables to each part
I've tried looking around watching videos for changes in power like balanced mode and what not
A few other things loads little things I cant remember with event viewer youtube videos.

Things left I'm thinking of trying:
When i switched PC i took the old hard drives and ssd over with windows on it and I think i had to switch the bios to CSM mode or I disabled it. I'm thinking of moving it to the m.2 ssd or re installing it fresh on that maybe there's too many hard drives in.

I'm stuck really not sure what else to try. If anyone has any help I'd appreciate it because I have no idea what to do now thanks.

You're advised to reinstall the OS when you migrate to a new platform in which the motherboard is anew. Make sure you're on the latest BIOS update prior to reinstalling the OS. You can fabricate the installer for your OS using Windows Media Creation Tools and use a 16GB pen drive to fabricate the installer.

You will also need to disable CSM, enable UEFI options, Fast Boot and disable Secure Boot.

Yeah I've re installed windows on my m.2 drive and just taken my old ssd out and it hasn't crashed yet i disabled csm and think I enabled uefi where you can choose either other os or the windows one. I think fast boot is on I'm not sure about secure boot. So ill double check next load up and get back to you but I think what you've said is the answer. I've seen some with similar problems to mine I think with crashes and cycling at boot this maybe their problem too.

OK I've reinstalled windows on my m.2 drive everything seems fine but then after playing games for a few hours it happens again im not sure what it could be other than gpu getting to hot but I don't notice it go above 80 degrees only the hotspot does. Any other ideas ?
