I just ordered a K7T266 Pro motherboard from MSI. I have conficting info. Does this board use PC1600 or PC2100 memory??

According to the <A HREF="http://tw.msi.com.tw/product/main_show.asp?pro_name=MS-6380" target="_new">MSI Product page</A> it supports 133MHz FSB. PC2100 is run under 133MHz so it means you can use PC2100.

Are PC1600/PC2100 new generation memories? I'm using PC100, can I use either PC1600 or PC2100 on my PIII-500MHz system?

You have to have a special motherboard to use PC1600 or PC2100. Chances are, your PIII-500 mobo can't handle it, but VIA makes a P3 motherboard that can. Honestly, though, PC1600 or PC2100 doesn't offer any advantage when paired with a Pentium III anyways. The PIII just can't take advantage of it.
