What does the "P" mean? Or is it just the same as regular PC4-2133?
I need to add a couple sticks DDR4 2133MHz RAM to my office (desktop) PC, and it has the non-P stuff in it now..

I think most likely it's the same.
I'm seeing the letter at the end like that is generally referred to as a "modifier" and can refer to something as simple as the color of the memory.
It can also refer to the "series" of the memory within the manufacturer.

Depending on the model number (varies by manufacturer), it could also indicate memory sold as a pair. For optimal results, you should always installed matched memory.
