Hello all!
Just built a small home/server PC based on the x79 chipset
My question is can I get a name SSD in the form of a pcie card (not an adapter) and use that as a boot drive? Or am I stuck to SATA drives?
The one I am looking at is the plexor m8pe 256gb.

Highly doubtful.
But which specific motherboard?

And for a home server type application? An NVMe drive is absolutely not needed.

in order to have a bootable m.2 nvme drive on x79, you will need a bios update (if your board manufacturer ever released one). You may be able to find a community created modded bios for your motherboard (if it was a popular brand)
I have an asus x79 sabertooth and was able to update the bios with 4801 beta which added bootable nvme support. i used the aquacomputer kryo m.2 evo adapter. using an adapter doesn't matter it's still going to use the nvme protocol rather than ahci

No.
Boards of that level were produced long before NVMe drives were a thing. The BIOS does not know what to do with them.
Highly doubtful there is a specific BIOS update for your board that would allow this.

Even if the stars all aligned, it rained puppies, and you sprinkled powdered unicorn horn over it...an NVMe drive vs SATA III drive makes zero performance difference in your use case.

Yes an update would work. It already has pcie 3.0 support. X79 was the first Intel offering to have pcie 3.0. And getting a pcie ssd to use nvme instead of ahci as a controller is simply a microcode update. Google your boards bios number and see if any reputable site has an update. If it's a huanan board from aliexpress it should already have the update
