I am building a new rig that will be used also for 1080p gaming. Which processor should I get from these? I know that with a new Intel i will have future upgradability but what about performance?
The single core performance of the i3 6100 is so strong, it easily beats all the others in gaming. Even in multi-threaded apps, it performs better. Combine it with some faster memory for even more of a boost. Like you said, future upgradability, very good iGPU, and lower power consumption make a very strong argument for using it over the others.
That would be my choice. Pair it with a Z170 motherboard and a good cooler, you can even overclock it. Just be aware, there are some downsides when you do.
I already have a case and hdds. I am not sure about the motherboard yet, Corsair vs550, Corsair vengeance 8gb DDR4 2666Mhz and maybe I'll go for an 750ti for now or maybe I'll keep intel's hd graphics until I get a gtx950

The 6100 only supports RAM up to 2133Mhz, so you could save some cash there.
I'd recommend that you replace the Corsair VS550 with an XFX TS 550W; the VS series isn't the best. Tom's has a PSU tier list which you can check at http://www.tomshardware.co.uk/forum/id-2547993/psu-tier-list.html.
I wouldn't bother with a 750 Ti if you're planning on buying a GTX 950. Save your money and just go straight to the 950, or look for a second-hand GTX 770 or R9 280X.

If you consider the price of a Z170 board to overclock an I3, you might as well get a Gigabyte GA-H110M-A for $45 and get an I5.
