Would like to know if buying a 3rd gen i5 is still worth it. I'm wondering if going for a skylake is still better than going for an i5 3rd gen. I would pair it with a GTX 1050 for gaming and some video editing.

It will do fine with a 1050, but they are beginning to show their age a little as Sandy Bridge really needs higher clock speeds to keep up these days. If you can go for a standard 2500, that would be even better.
Yes, the higher clocked the better.

The Pentium, despite high per-core performance, doesn't have hyperthreading like an i3, and doesn't have the 4 physical cores of even an older i5.

Overall performance between generations hasn't changed that much; a 3570 is still a very capable CPU in gaming and rendering workloads.
