Would I see a decent performance boost going from an i5 6600k to Ryzen 2700x. I've been struggling in games like BFV and AC Orgins with the i5 6600k paired with an RTX 2070. A lot of stuttering and lag spikes even on medium and high settings at 3440x1440. Would it be enough to mitigate those issues, going to the 2700x or should I look at other CPUs?

Price and performance-wise, 2700x is good choice to go for 2070. However if you are willing to spend a few more bucks for a intel side of things it will serve you way more better than 2700x. You can go for i7-9700k for about $200 more.
It's a unbeatable pair of performance.

In the games you mentioned you should see a moderate improvement because they will utilities more than 4 threads very well. I’d expect higher minimum FPS and average FPS but you might see lower maximum FPS. Your current cpu actually have better single core performance before being overclocked, it just lacks total core/thread count.

On games that only use 4 threads or less you will be downgrading performance due to Ryzen’s lower single core performance.

I’d wait for Ryzen 3 before choosing. Some reports are claiming a big boost in single core performance allowing it to match Intel.

Id wait for the Ryzen 3 release if I were you, maybe youd get more for your money.
And the R7 2700x is a great CPU easily one of the best atm. especially for the price. ^_^

only go intel if you can afford it then again just wait for the ryzen 3 lineup to come up and chose from there.
example
