1) Yes you can create your own router and install pfsense

2) Depending on what service you pay for At&t should work fine with pfsense

3) Gigabit performance would be dependant upon the hardware of your router and the At&t service you are paying for. Pfsense can certainly administer networks using gigabit ethernet.

From my experience the users on the pfsense forums are extremely helpful with questions relating to custum builds.

Thank You! I know what hardware to use and stuff but the main thing I was concerned about was the gigabit connection to at&t. Is that even possible yet?
 
Not that I'm aware of, but I'm in the neck of the woods that is dominated by Comcast so I haven't checked At&t in awhile (pretty sure they don't though). As far as I know you're not getting Gigabit ethernet unless you have a local fiber ISP or Google Fiber has released in your area.
