I'm a big fan of e-ink screens for long term display. I'm got a project on the go to make one myself, but it makes no sense to use the Pico. One advantage of e-ink is low power to the point you can use them with batteries. However Pico do not really have a low power sleep mode meaning it will have to be mains powered. An Arduino makes more sense here

Not the Arduino based on AVR MCUs. While they do have sleep modes, they still draw more current in sleep mode than many ARM Cortex-M based MCUs do in sleep mode. Not to mention drawing much more while running.
