I was going to order a monitor and realized I didn't know what pixel pitch was... 😱 Could anyone tell me what it is and the recommended minimum/ maximum whatever.

Pixel pitch is the distance between each pixel on the monitor. Generally speaking, the smaller the pixel pitch, the sharper the images and text will be. When comparing the same native (max) resolution across various monitor screen size, the smaller the size, the smaller the pixel pitch.

For example, the pixel pitch of a 24" 1920x1080 monitor would be smaller than the pixel pitch of a 27" 1920x1080 monitor. A laptop with a 17.3" 1920x1080 screen would have even smaller pixel pitch. Of course, the smaller the screen size for a given resolution, the smaller things will appear and the harder it is to see details and read text.
