Planning to upgrade to GTX 1080, will my system be fine?

Hi all, I've been wanting to upgrade my GPU for the last few years and I feel like this year is the best time to do it. Will my current system be fine if I upgrade to the new GTX 1080 or will it cause a bottleneck issue?

Here are the specs:

Processor: Intel(R) Core(TM) i7-3970X CPU @ 3.50GHz (12 CPUs), ~3.5GHz
Memory: 16384MB RAM
Available OS Memory: 16328MB RAM
Powersupply: 1,200 Watts - Corsair AX1200i

I only plan to play up to 2560x1440 resolution no plans for 4k for me yet. I might also play VR if there's a game that grabs my interest. I currently use two monitors with my PC if in case I get GTX 1080 will I be safe running 3 monitors? One 2560x1440 resolution and the other two with the traditional 1920x1080 resolution.

Yep still a very good system.

What CPU cooler do you have? As overclocking your cpu will help you in many games where single thread performance is important.

I don't plan to play on three monitors, maybe two monitors at most and leave the other monitor for internet surfing or watching twitch streams while playing. Will that be fine? I've never run more than 2 monitors so I don't even know if that's possible.

Cooler Master Seidon 120M Liquid Cooling System 120MM Radiator. Will it be fine?

Yeah that should be good enough to aim for a 4-4.2Ghz overclock which will give you a big boost in games that cannot take advantage of all your cores.
