Play the newest games-leaning towoards 1 video card . Would also like to hook up cable to the tv tuner but it only displays 1080i. Probably hook up a blue ray player.

I don't think you need the sound card, just try onboard sound first to see if its good enough for you. If it isn't, then adding a sound card just takes a few seconds.

1 GTX 295 should be enough for 1080P, you might be able to get by with a GTX 285.

It doesn't sound to me like you need an i7 system, since gaming is your main goal. A Q9550 or E8500 will do just as well as the i7 in most games, sometimes the E8500 does better.
If you went with the E8500 and GA-EP45-UD3R mobo and Corsair DDR2-800 4gb kit, you would save like $300 and get the same performance out of your rig.
