I'm planning to put together a computer with primary purpose of learning 3D animation, though photo editing and gaming will also come into play. I don't plan to overclock anything.

I will be reusing a HD from my current computer, which is Western Digital 2TB 5400 RPM SATA. No solid state drive to cut costs. Same reason why I intend to put only one RAM-stick in it for now.

I'm feeling sure of this build, though I'm still deciding between the SC and non-SC version of the video card. Other than that I'd like to know if I could push down costs yet more without compromising on quality or performance (or obtain more performance for the same amount of money).
 
MEM - A single modules, or mismatching modules, will have you in single channel mode (reduced performance). Always install modules in matching pairs to take advantage of the dual memory controllers. There is no need to install a single module unless you are using a paired-down motherboard (or an ITX board) with only two memory slots. Look toward a board with four memory slots. Also, the AMD platforms respond well to faster memory.
SSD - Just add one now. It will greatly improve your experience with your intended purposes.
GPU - For the GTX 1060 6GB, the best bang-for-the-buck is with the EVGA SC Gaming. High factory overclock and one of the lowest prices. ...and a good cooling solution.

I don't live in the US and pcpartpicker isn't a useful guide where I live.

GPU: the price difference between the SC and non-SC versions is 20-30€ range around here.
Mobo: There's also barely a price difference between the mobo you suggest and mine.
Case: Your suggested case doesn't appear to be available. The Corsair Carbide 200R case seems like a good alternative to Antec One here however. Roughly the same cost, but slightly betters specs and ratings.
MEM: likewise, your suggestion is priced at 100€, compared to 90€ for a G.Skill 2400Mhz version and 80€ for that single stick Corsair. However, Team Group Dark 2X4GB 2400Mhz is priced at 70€ and Group T-Force 3000Mhz is priced at €75. Should I just go for the cheapest possible for a given speed? Could I run the risk that the brand/model might not be sold anymore in the future when I want to expand? I'd figure that Corsair or Kingston are certain to stay around whereas an obscure brand might not.
SSD: really not going to get one. I'm used to a computer that starts up slowly and that's about €100 saved.
