The 1060 requires 400W: https://www.geforce.com/hardware/desktop-gpus/geforce-gtx-1060/specifications
With 500W you have got an overhead for CPU overclocking/boost. Yes, 500W is enough. Make sure you get a reliable unit!

I'd get a 550W PSU just for the sake of extra headroom and holding onto the unit for a longer period of time, i.e for upgrades. Where are you located, how much can you spend on a unit and where would you like to purchase it off of?
