Can someone help with explaining "contract not protected"

After a certain period of time (3 years I think) after a contract has been
signed, anyone can negotiate a contract with the player and the player's
club can't do anything about it. If the player agrees a contract then a fee
is decided by a tribunal and the purchasing club has to pay the selling club
this fee in order to sign the player.

I've managed to pick up some bargains this way - lost a couple of
players this way without even knowing it!!

That's correct. If a player is under 28 when he signs the new
contract, then it's protected for 3 years. If he's over 28 it's
protected for 2 years.
