Plex & Gaming server out of a Zotac Magnus?

Hey all

Previously I had asked help picking parts for a Plex server/Media/Gaming pc that can play 4k video and run games like Rocket League (@1080p,60fps) which boiled down to this build:

After I started mulling through some of Tom's Hardware reviews and learned about bare bones PCs, which lead me to this build:

It gets me a 1070 instead of a 1060, quieter, smaller, saves me $200 and it's an easier build as I am a newbie.

I realize there are some trade-offs to taking this route (slower RAM, worse(?) CPU & external HDs). BUT from what I can tell RAM isn't a big issue, I will be streaming to a MAX of 2 other devices so I can't see there being too much of a strain and I don't plan on hoarding files so storage shouldn't be an issue).

Is there something I am overlooking or is this just the way to go for me?
