What are the specifications of the data cable
for the Plustek OpticPro 4800p scanner
(using EPP printer port)? It looks like simply
two DB25-pin connectors, one male one female.
Plustek documentation does not give cable
pin-out or other specifications.

The spec is IEEE 1284 M/F.

The pin out of the cable is all pins are connected straight thru. pin to pin
or pin 1 to pin 1 thru pin 25 to pin 25.

If you want the pin out of the EPP port, lookup the spec for a parallel
printer port.
