You can't use SLI with any card that is below the 1070, so no it will not work. You can keep it in case you want to build another PC.

For gaming Imho only justificable one would be with high-end cards for 4k+ resolution above 60Hz for those games that can reliably support it... For others, only if you can get the second card really really cheap. Don't expect getting double fps, that is close to wishful thinking, rather around 1.5x if you are lucky.
 
Yes..and no. These days, modern cards are very powerful, even the low-end ones. Unless you are trying to acheive triple 4K gaming and maintain 60 FPS, then you would need SLI or Crossfire. But if you have one monitor, a GTX 1070 or 1080 or R9 Fury should be able to handle 4K Gaming. If you are sticking with 1440p or 1080p, then a single card would be jsut fine, and no need to get two.

Not to mention, a lot of games are not optimize for SLI, so it's mostly for aesthetics.

For gaming and heavy workloads, such as rendering high resolution images, yes. It definitely helps to have multiple graphics cards. They help balance out the workload and usually get close to doubling the output of FPS in games and decreasing the time it takes to process heavy amounts of data. However, it depends on what you are doing with the cards, 1080p you really only need 1, dual 1080p you could use 1 high end card or 2 mid range ones, and 1440p+ multiple high-end cards will do the trick.
 


Not sure what you mean by using 2 1080p and two cards. I triple 1080p monitors, and I use a single GTX 1060, and I am able to play games at 5760x1080 at ~55FPS on high/ultra settings.

I use 2 1080p monitors and have them both running off of my r9 380, I can run most games on max settings 60 fps no problem, but on newer titles such as Overwatch it struggles to hit 30 on medium. It's not the most high end card but it gets the job done, but I will soon be upgrading to a r9 290x. I meant with two r9 380's (or similarly benched cards) in crossfire it should be able to pull off 60fps easy.
