Question Possible upgrade path after dead motherboard

My motherboard died 2 days ago, I had a MSI Z390-A Pro with an i7-9700K with a Cooler Master Hyper 212 Black Edition, the Z390 is discontinued and I can't find any store that ships motherboards with that chipset to Portugal, I could try the used market or ebay, but I really want to avoid it, ebay from a reputable seller would take 2-4 weeks, which is way too long.
I could buy a cheaper board that is still on stock, but it won't allow my rams to reach their max speed and paying for a downgrade is unthinkable for me.
Unless I can find someone to fix the board, I'll have to upgrade and I can't wait for the next gen because I need my PC for work.
I was thinking of getting a 5800X3D or 5900X or 5950X with a Noctua NH-U12S SE-AM4 + Asus TUF Gaming X570-Plus, I currently have a RTX 2080 + 2x16GB@3000, which I plan on upgrading down the line to a RTX 3080 or RTX 4080 when it releases (I have a gold rated 750w PSU which should work with the 3080).
So my question is really on which CPU to get (if I must), I work mainly with coding and 3D stuff (game dev & VR), I need very high fps for competitive games (CSGO/VALORANT) and I'm aiming for 360+ fps to make use of the 360Hz monitor (I only game at 1080p).

For the cpu+cooler+mobo I was looking for 900€ around the same as a 3080
This is the third Portugal build on here this week. :) The 5800X3D is a great gaming cpu but not so good at anything else. You have a lot of options with that budget. If you plan on running dual M.2 SSD's then I would look at a Z690 or H670 board due to their amount of PCIe lanes and if you are ok with a single M.2 SSD then I would look at a B660 board paired with a i7 12700 or 12700F.

If I'm going for Intel I'd probably get the 12700K instead compared to the base one, only 35€ more, I plan on keeping the same ram (unless there is a great performance boost)

Yes, but I can overclock it, I value the possibility a lot, I'm not that concerned about the power or heat, the noctua should keep it cool.
If you use air cooling with the 12700K / 12700KF then you want this one.

If you don't need the integrated graphics that comes with the 12700K then you can save a few euros by going with the non integrated graphics version of that cpu.

I'm heavily considering the 5800X3D + 6900XT now, I'll most likely need a new gold PSU that is 850W or 1000W, or get a 1300W one so I can still use my 2080 for nvidia specific features (unlikely that I'll choose this), I'm willing to up my budget if I get something that will last me a long time, my ram is 3000mhz but I think it should be fine.

However if I go for the 12700K with RTX 3080 I won't need to change the PSU. (I don't like using DLSS tho or use RT for that matter)

Update: looks like a technician has a brand new MSI Z370-A PRO lying around, it won't be a downgrade so I'm happy, I'll look into the upgrade once the next gen comes.
