What's your overall budget? Do you have case / PSU / BD burner already?

I am trying to stay under $2000. I have those items already, they are $0 on the list. They are part of a Haswell build I never assembled. The rest of the parts are going to be sold, most are still shrink wrapped...lol.

What's your monitor resolution and refresh rate? Do you plan buying a 1440p monitor or 1080p 144Hz+ or 4K?

You could get the build above and change the GPU depending on your monitor or you can keep the 1660 super and sell it when Ampere comes out and get yourself a new RTX 3000 series.

I have a pair of Asus 27" 1080p monitors I got for Christmas last year, I will be sticking with those.

The CPU comes with a cooler. Do you think it is insufficient? I don't plan to OC.
The pair of 16 GB sticks opens the door to 64 GB easier down the line, good idea.

A better cooler always helps to keep excess thermals at bay especially under high load, but you can always start with the stock cooler and then go on to the aft if deemed necessary.
Those 16GB sticks are CL16 as well...
