Question Power Supply Enough for new Gaming Rig?

nVidia recommends a 750W PSU for the RTX 3070ti so it seems that you have the right PSU.

But personally I would feel more comfortable with a 900W, even 1000W PSU to make sure it will last longer (less stress means longer components lifespan).

The psu would be fine for a 3070ti.
Here is a handy chart for other gpu options:

I might ask about some parts selections.

If buying new, why not go to 12th gen.
For example, even a I5-12600K will perform better as a gamer because of higher single thread performance. Most games are not going to use even half of the 16 threads.

I advocate bypassing the F option.
The extra you pay for integrated graphics is cheap insurance to keep you going if you have a graphics card problem.

Your cooling needs would be less, easily handled with a good air cooler.
The paste that comes will be adequate.

Modern motherboards will come with wifi as well as lan, no add in cards required.
A B660 based motherboard with DDR4 is not expensive.

Why the two m.2 devices?
Just buy the single 2tb m.2 and keep life simple.
