Question Problems with Catalina after installing SSD

Hardware used:
Mac Mini A1347 (late 2012)
CPU: Intel Core i5 3210M 2.5 Ghz
RAM: 4 GB @ 1600 Mhz
SSD: Samsung 870 EVO 250 GB

So I've replaced the HD for an SSD, latest version OS Apple supports for this Mac mini is Catalina, made a bootable USB with Macdaddy and installed Catalina without hickups. But now when I boot there is the circle with the stripe through it, which means that hardware is not supported. But this happens not all the time, sometimes it boots normally, mostly the circle. Also tried the Hardware diagnostic tool but it says cannot load EFI drivers, which looks like there was a problem with installing the recovery disk image. Did a filecheck with disk utility and no corrupt data found. Is there something else I might want to check before taking the SSD out and reformatting it?
