The underlined "processing your payment information" means getting payment from you. Usually via a credit card. The business has to interact with the credit card network. Or interact with paypal or some other electronic payment system. "arranging for shipping" means doing the work to get your product shipped to you. Printing a mailing label, paying postage, arranging for a pickup by a shipping service (UPS, FedEx, USPS, etc).
