PSU for GTX 1080 Ti (OC) and i7-7700K (OC)

I'm planning on building my PC in a near future and I'd like to know which PSU you recommend me. I was checking and when the CPU is overclocked, it goes up to 272w and the GTX 1080 Ti, 428w.

I was thinking of getting a EVGA PSU of 750w but based on PC Part Picker and what I read from different reviews, it'd 794w total with both things overclocked.

I don't have much knowledge about all of this, so I was wondering if anybody could help me because I'm thinking of getting a 1000w PSU now but I'm not sure.

Really? Hmmm... but there's something I still don't get. First of all I want to apologise for my ignorance.

When I added all the stuff and calculated it, it was 794w. 272w from the CPU (according to LegitReviews.com when overclocked) and 428w from the GTX 1080 Ti (according to [H]ard|OCP when overclocked) and OuterVision, when I added the stuff, it showed 626w (http://outervision.com/b/OLxe9X).

How is it possible that a 750w PSU would be enough when I could reach almost 800w at some point?
