Putting together a build with:
CPU: Ryzen 7700X
GPU: RX 6800 or a RX 6800 XT (waiting to see if price drops also hit the XT version)
Storage: 1 x NVMe and 2 x M.2 ssds
Case: Fractal North (4 120mm fans)
RAM: 32gb
No plans for RGB or other PCIe cards or overclocking etc.

Recommendations for a decent PSU? I've been looking at
Corsair RM750e 750W and NZXT C-Series Gold C750
but I'm unsure if they are overkill. It's just got to be reliable and quiet.

What is your budget for a PSU?

This is overseas, so the pricing is a little different. About 120 USD - or around 1000 DKK if you go by the prices on the sites I linked.

There's about a 15% premium on electronics here so the money doesn't go as far as it would in North America.

I also found a Corsair RM750e for 1069 which is at the top of my budget. Reviews say it's pretty quiet? But again, I don't know if this is overkill, no reason to go crazy if it isn't necessary

For your use a 650W or 750W is the way to go. Based on your budget I would look at this PSU.

This offers better performance than the RMe and unlike the NZXT I can actually find reviews about it.

NZXT C Gold 2022 is better quality than RMe and Pure Power 12M. A lot better fan and better internals. 850w is available for 980kr and would be my recommandation.
I would love to read a review on the 2022 model. I've only seen reviews on the 2019 model that uses SeaSonic for the OEM. I've seen a review on the C1200 that just came out with CWT as the OEM but that isn't the C 2022 either. The C1200 seems to be different than the 2022 as the C1200 is an ATX 3.0 PSU whereas the C 2022's aren't.

All 2022 models have a CWT CSZ platform, the 1200w as a ATX3.0 version.
Here you can find a review although it's not the best review https://www.eteknix.com/nzxt-c-series-c850-c1000-gold-power-supply-review/
