I have just purchased some upgrades for my son's aging PC Specialist pre-build starting with the Asus H110 M-R motherboard to a MSI Z270 Tomahawk, the i5-6500 to a i7-7700k. I already have a Zotac GTX 1060 6gb card so was going to stay with this till more funds are available, however my psu is a Corsair VS550 and I'm not sure if this is good enough, I do have enough funds for something like a Seasonic Focus Plus+ 550 Watt Gold Modular but I don't know if it's necessary as I'm not very computer savvy, I purchased the i7-7700k for £120 new and the mobo was on offer for £79 new, so although i got a good deal I'm not sure if I need the psu upgrade? I also have two HyperX Savage 480ssd drives, a 500GB Samsung 970 EVO M.2 (not fitted yet), 1TB WD hd and a Cooler Master ML120 RGB AIO cooler.
Any advice would be much appreciated.

Corsair is a good company but makes a wide variety of products to include many models of power supply units. The VS is the lowest and good for cheap low power computers like office units without dedicated GPUs and low power CPUs. The CX is the next Up, TX then Rmx. TX is the lowest corsair unit I would use in a gaming computer with Rmx being preferred. Seasonic is my top choice for PSUs and a focus gold is plenty for now and the future. A 550watt is sufficient for up to a 1080gtx, however if money isn't much concern I would use the extra $5 for a 650watt for headroom and to ensure that you keep the unit from maintaining a high usage percentage which will, let it run cooler and possibly longer.

I though Corsair was a good manufacturer? You are the second person who has said the VS series is more or less junk, the word you used "shouldn't" damage anything does not sound too positive, will 550w be enough if I purchase the Seasonic or should I pay the extra £5 and go with the 650w as I plan on upgrading the gpu to a 1070ti... ?

Those components aren't exactly all that power hungry, at least so long as you are not overclocking. Under load, the GTX 1060 should only draw around 120 watts, and the CPU around 100 watts or so at stock settings, so I wouldn't expect them to be pushing that PSU near its limits. Power use of all the other components should be relatively minimal, and I doubt the system would ever draw much more than 300 watts from the PSU under load, again, unless the CPU is heavily overclocked.
