PSU wattage for GTX 1080 and i7 6700k both OC

Honestly a 650 watt would give you headroom to OC and then some. If you can find a 750 watt PSU for the same price as the 650 then by all means get the 750 watt(since I looked newegg was running that deal). With a 350 watt draw you are still in the sweet spot for...
With no OC the system will draw around 350 watts(yes that is correct). A 550w - 650w PSU would be fine. Newegg has the RM750X on sale right now for the same price as the 650w one. I personally go a bit higher than what is needed because I like the fans to spin slow or not at(this PSU wont spin its fan on until it hits a decent load) all since I like my PC to be very quiet.
 


So getting a 750w would give me headroom even with OC and case fans, storage ETC?
 


The 650 Watt will work just fine but if the 750 is the same price no reason not to buy it.

I wouldn't go any higher than 750 watt unless you really thing you need to SLI.
