Will RM850x (2021) suffice? Or should I aim for higher wattage? Usecase will be: making music (CPU/RAM intensive - 0 GPU when making music), editing videos, and playing videogames on weekends.

The RX 6900 XT will either be a MERC 319 Black or ASUS ROG STRIX TOP GAMING (XTXH).

If 850 isn't enough, would you recommend an older model of RM1000x? 2021 isn't available here in Iran, when it comes to RM1000x. Seasonic isn't available here either.

600Watts is the bare minimum for an 6900XT , so in your case unless you use some other powerful CPU or cooler then you are OK.

I'm running my overclocked 6900 XT and i9-9900k on the RM750X. My 6900 XT gets me over 22k graphics score in Time Spy so I can't complain.
The RMx series are spectacular PSUs. You won't have any issues.
