Hi Kevin,
I'd like to affirm the recommendations of Viewtiful Joe, I-Ninja, and
Cubivore. All three definitely worth picking up. VJ and I-Ninja you
shouldn't have any trouble finding for $20 or less, and Cubivore
shouldn't be too hard to find, just check eBay. There's three copies
up on there right now: http://tinyurl.com/6po9h.
In addition to those games, I'd recommend considering Animal Crossing.
It's not like most games, and it's not everyone's cup of tea, but I
found it to be an enjoyable diversion. Maybe rent it for a week and
try it out at least. Just make sure you have 64 blocks available on a
memory card.
I'm also amazed that no one has yet recommended Super Monkey Ball (1
and/or 2). What could be better than monkeys in translucent balls
traversing magically suspended obstacle courses? You don't have to
answer that.
Also, you didn't mention whether you were mostly interested in
GameCube-exclusive games, but James Bond: Everything or Nothing is a
pretty fun 3rd-person action game. Also Simpsons: Hit & Run is amusing
while it lasts, as a GTA-ish game.
Lastly, I've heard that Metal Arms: Glitch in the System is pretty
good, and while I've not yet played it, it's on my list of "games to
get."
