Hi I just bought a new ssd and wiped my old hard drive. I want to reinstall windows on my new ssd and not on my old regular harddrive. Should I unplug my old hard drive plug in the new ssd install windows then plug in my old harddrive?

You can simply keep them both plugged in and change the boot order in the BIOS so that the SSD is first among the devices to boot.
Leaving them both plugged in will usually result in the System Reserved partition to be installed on the other drive. If you ever take that drive out...no boot for you.
Having only one drive in forces it to be on that drive. And you have zero possibility of accidentally trying to install to the wrong drive.
