I have this power supply https://www.amazon.ca/XFX-P1750BNLG9-ProSeries-Semi-Modular-Silver/dp/B005IUVYA2 and I am upgrading to one of the new 3080s that requires 3 8 PIN connectors. Unfortunately I lost the extra PCIE cables that the power supply came with so I only have 2, 8-Pin connectors and have been trying to track down replacement wires. I contacted XFX and they stated that the power supplies that they sell all have Seasonic as their OEM and this power supply is basically the same as the Seasonic M12D design. XFX gave me a link where I can buy additional wires https://www.btosinte.com/Seasonic-8...connectors-Modular-Cable-OEM-SS-82x62PCIe.htm I found that cable after searching M12D.

My question basically is since this cable splits into two separate 6+2 Connectors, can I just use this as the third connector with one of the 6+2s that this splits into just hanging around?

Solution
that is how it is designed. if you need both 6+2's then use them both. if not then hook up the one you need and leave the second one "hanging out"

nothing to worry about as this is how it is designed to work.
I don't think the Nvidia splitter is 2x6. I'm pretty sure it's 2x8.

this has nothing to do with the question. so far only the nvidia FE cards are using this. all the custom cards i have seen so far are using either 2 or 3 8-pins to power it. the high end models seem to be leaning toward 3 8-pins. so that is what the op is looking at to buy and needs a 3rd 8-pin to be able to power it.
