Has anyone tried plastic for cooling connectors?

Not sure what your question is.

Quick disconnects have certainly been used for water cooling. There are many products on the market today for pre-filled expandable AIO with option pre-filled GPU blocks and the like that can be swapped in.

In the early days of water cooling, plastic plumbing components and aquarium pump and fittings were often used as well.

You can also certainly get G1/4" plastic barb fittings, though I can't say I've actually seen anyone use those.
