Will the Gigabyte SabrePro15 be able to run Euro Truck Simulator 2 at Ultra Setting.
Specs:
nVidia GTX1060
Intel® Core™ i7-7700HQ Processor (6M Cache, up to 3.80 GHz)
16GB (2x8GB) 2400Mhz
Windows 10 Home

With a laptop GPU/CPU, yes, it would, but not at a constant 60fps (probably around 30-35fps avg. on Ultra, but may reach 60fps in certain scenes).

Note that the test video above uses the GTX 1060-6GB (Desktop) and the i5-6500 (Desktop) producing ~40-50fps (avg) on Ultra.

Your GTX 1060-6GB (Mobile) is about ~20% less in performance compared to the desktop version...

Thank you for your extensive answer, it is very much appreciated. However is it true that, inferred from your answer, that, Yes, this system can run ETS2 on Ultra at 60FPS?

Not constant 60 fps, but it can reach 60fps depending on the scenes during gameplay (frame rates would vary and would dip to ~30-35-ish or ~40-45-ish on some scenes as you can see in the test video). But it'll run ETS2 on very playable frame rates on Ultra using that laptop with a GTX 1060 + i7-7700HQ + 16GB RAM very well.
