So I plan an upgrade, and I have purchased everything except the cpu. I have 16GB ram 3000MHz, GTX 1070 and a 1080p 60Hz screen that I might change later and asrock steel legend b450 M/B. In my country i can find 2600 for 100€ (maybe 90) used (i dont really mind) and 3600 for 200 new (cant find used).I mostly game on this machine and benchmarks are not so helpfull. Im also thinking about future, is 3600 more futureproof? is it worth double money for ~20% more performance?

Get the 3600 it is more efficient, supports better memory speeds, higher ipc (more fps in games).

An 8 core 16 thread part would be future proofing if you ask me.

If you are strictly restricted to budget and not willing to spend more, you can buy 2600 used, it's the best value for money or get the latest 3600 it will last you well.

I think the two ones have 6 cores and 12 threads. (not 8/16).

Given the monitor and the graphics card, in my opinion, he will not take advantage of the small advantage of the 3600.
