I would like to know what is the highest resolution the R5 5600U chip can output and is it suitable for connecting to a 2k 75hz monitor

Short answer is yes, the chip will support that resolution. It will even do 4k. However, you will not be able to game at that res. The iGPU in R5600u is not that powerful.

I don't really play games, just extended a second monitor to use some programming software, some normal office software and some Edge tabs. But will it reduce device performance and become hotter than usual?

No, it shouldn't reduce performance. It's designed to operate with built in CPU/iGPU. The iGPU is enough to run at high res doing normal tasks. No problem. CPU is capable enough in terms of standard tasks, and light gaming.
