Well, it really depends on what you want to do.
If it's for just gaming, then the R2600x with the slightly higher boost may yield a few FPS more in one game or another. The 2600x will be cheaper and as good as the 2700 in general gaming terms and in most other instances too, except for very particular software which can use the extra 2 cores/4 threads of the 2700.
The 2600x will work just fine with your RTX2060 as would the 2700.
If cost is a factor, get the cheaper CPU, it's a great gamer/streamer, and will do anything you want it to do right now.
