Go with the R9 290. It is newer tech., and you won't have any of the problems that can come up with SLI.

Two 760's are about equivalent to a 780 and a 780 is about equal to a 290. So, I doubt that two 560's which are two generations older than a 760 will perform aswell as a r9 290. Also, the 290 is new tech and supports mantle in many games which is a big plus. Good luck!
