Two questions actually:

1. Question is in the title. I'm pretty sure it's not possible, but I just wanted to have it confirmed by at least one other member of this forum with some seniority or experience using Intel's RST.

2. I also wanted to confirm if there are any size limitations? Can I accelerate a 6, 9 or 12 terabyte raid 5 (or raid 0) volume using a single SSD?

Yes, you can use IRST with a raid array, but you are limited to only 64GB of SSD space. HERE is a brief tutorial. It would not be worthwhile in most cases that I can think of due to the small size of the cache available using IRST. IMO it works best when using a full 64GB on a good 1-2TB HDD. A large RAID array is usually for storing large files, so mostly reading after the initial write, and speeds are generally adequate (possibly even to saturate a gigabit wired network).

You can also do it with an Adaptec 7800 RAID card and use any size and multiple SSDs, but you will not want to spend that kind of $$.
