I have two hard drives I want to RAID. From what I've read RAID only works when SATA is configured as IDE. However, if I do that won't I lose the benefits my SSD gets from being in AHCI? Is there a workaround this and is the tradeoff worth it?

No, you generally have to enable RAID in the bios, which will not affect an SSD that is not part of an array. AHCI is a subset of RAID and with a single SSD RAID will be the same as using AHCI.

You could also just use software RAID in Windows disk management: http://www.howtogeek.com/howto/36504/how-to-create-a-software-raid-array-in-windows-7/
