Question RAM and Motherboard Compatability

I have the following 64gb (4x16gb) memory from a former build:

I am planning to have the ASUS Prime x570-Pro motherboard for my next build. Apparently, this memory kit that I already own is not in the QVL. I also just realized that the previous motherboard I used this on (Prime X299-A) was not formally compatible either with this memory kit. However, I was able to use the RAM without any known issues. What is the downside of of not using a memory kit that is in a QVL?

There aren't a whole lot of options for a 64gb kit in the QVL. Also, I don't think that blowing another $300+ for a different RAM kit would be practical. Of note, the memory kit SHOULD be compatible according to PC Partpicker, although it is not listed in the motherboard's QVL. What explains this discrepancy?
