What and how much ram would work the best with an i5 9600 processor?

Depends on your intended use-case.

Any DDR4 ram will "work", but quantity and speed for ideal operation will depend on what you want to do.

Aim for an absolute minimum of 2x4GB 2666MHz for most use-cases with that CPU. For gaming, lots of Chrome tabs etc, aim for 2x8GB 2666MHz.
