Reasonable FPS for new Computer?

Hello. A week ago, I built a new computer for gaming, mostly minecraft because my old laptop was getting unbearable as the frames never went over 25 on the LOWEST settings. The specifications of my NEW COMPUTER (not the laptop) are:

AMD FX 8350 @4.00 Clock speed
8 gigs of DDR3 1600 Mhz G SKILL SNIPER RAM
PowerColor Radeon 7870 GHz edition OVERCLOCKED

That should be all you need to know for my question. So. The reason why I have gone with an AMD CPU was because I saw someone on YouTube with the same 8350 on the same clock speed with a Gigabyte 7850 and 8 gigs of ram get 300+ FPS on minecraft WHILST recording. I was going to get the exact same computer as him, but they had ran out of the Gigabyte 7850s so I went with the closest one, which was the PowerColor 7870.

I get about 250 fps on the same graphical settings as the YouTuber and this is WITHOUT recording. The FPS sometimes dips into the 300s but almost always on 200 ~ 250. I heard that Minecraft doesn't use the Graphics Card because its a CPU intensive game and mainly relies on the CPU. I have nothing else running when Minecraft is on, and fullscreen and windowed doesnt really make a difference. I thought that I would actually get BETTER Fps then him since typically, a 7870 is better than a 7850. Also, it costed $15 more.

So, am I getting the right FPS for my specs or am I just missing out on something? Have I made a mistake on buying the 7870? Am I even using the GPU at all? Does Minecraft USE THE GPU AT ALL?

It's not as if it really matters all that much. After 60 FPS, you can no longer tell a difference. If you are not going to be playing any games besides Minecraft, you do not really need a good graphics card, you could run the game on an Nvidia GT 620 (http://www.newegg.com/Product/Product.aspx?Item=N82E16814130814).

The reason he might have been getting better FPS is that he has his CPU overclocked.

I am pretty sure he has NOT overclocked his CPU as he use the stock heatsink and in one of his videos he lists his components and he mentions nothing was overclocked. And yes there is no difference between 60 fps and a million with my monitor but I was just thinking that I should get more FPS then him as my graphics card is more high end than his.
