The single stick will hurt performance slightly but all you should have to do is overclock the 1200 as far as it will safely go and I would also try to overclock the RAM. The R3 1200/RX 570 should be a good combo if your playing at 1080P.
I have overclocked it to 3.9 stable but I don't notice such a huge improvement. Can it be due to the fact that i only have 1 stick of ram? I overclocked it to 2666 but I can't tell if it worked or not.
It may be part of it, Ryzen really prefers 3200mhz in dual channel.
Well, yeah it may be part of it, but the increase in ram speed will only account for anywhere between 5-15% increase in FPS game dependant, which doesn't really account for 30-40 fps in game (although I would admit AC is demanding enough) In this case, it's possible if the OP has OC'ed the DIMMS as well it's possibly not stable and causing issues. Maybe the CPU OC isn't stable either?
To the OP what are you using to test for stability? What are your temps like? Monitor your system with HWmon/info to see whats going on in the back round. Also, try dial back in game settings and see if that affects FPS. If it does, then your just pushing the GPU too hard.
I'd suggest just starting with a CPU overclock first. Get it really stable i.e test with Prime95 small ffts, watch your temps, because if the CPU is too hot it will throttle and cause issues like that. Get your CPU stable, and worry about the ram afterwards.
Also, although there is a huge benefit to having dual channel ram set ups in certain metrics (memory bandwitdh, benchmarks etc) it has very little effect on actual gaming FPS versus a single channel configuration. So don't get hung up on that.
edit: 3.9 on an R1200 is pretty amazing. What cooling are you using. I suspect it's far too high an OC. What voltage are you using to achieve 'stable'? You should really monitor your temps with that OC.
