Remove GPU from Server after first setup

So I want to build a little server, which is meant to run some small applications. I've got an old GPU laying around which i don't really need. I want to use the GPU for the first setup and afterwards remove it to reduce noice. Will the system boot up and will i be able to access the server via remote desktop?
The CPUs I am looking at (Xeon) don't have integrated graphics.

Why are you looking at a Xeon.

You will find the CPU and case cooling noise will be much louder than your GPU when it is in idle mode.

What are you going to use the server for? Is it more cost effective to use a CPU that gives you onboard graphics. Would an i5/i7 or Ryzen 2600 provide a more cost effective solution.

If you are concerned about noise then stick to a CPU that has a 65W tdp.

I have lot of experience with silent computers.
You can get a fanless power supply, passive CPU and GPU and all you need is some quiet case fans to maintain airflow.
Then your biggest noise will come from your hdd.
