I have an HP xw6600 Workstation that's part of my project and I'm looking into adding some aesthetics by replacing the stock case that it came with.

This is the PC: http://h20564.www2.hp.com/hpsc/doc/public/display?docId=emr_na-c01383568
This is the ATX motherboard: http://www.ctsestore.com/hp-compaq-socket-771-motherboard-440307-001-439240-001-xw6600-tower

I've already upgraded the internals and now looking to make it look "cooler." I already have a few LED fans on the way.

My question is, is it even possible? Which cases should I go for?

As with any prebuilt, pay special attention to the motherboard power pins. The first time I tried to work with a prebuilt, i took back 2 PSUs and straight up bought a third one before I looked at the pinout. I'm mainly saying that because the psu might not fit in the new case, and if it does, I dunno if it's going to have all the power cables you need. Just a tip.
On the "do it fit" part, the motherboard is standard ATX. They only thing you're going to have a problem with is the front panel IO, as it's probably a thicc ribbon cable instead of modder-friendly individually labeled wires. Why? probably just cause they can. Hope this helps, and if you have more prebuilt questions, ask away

p.s. those are some funky dimm slots

I said the same exact thing, never seen something like it

Would something like this work? https://www.amazon.com/dp/B00I6BJATW/ref=twister_B019NLUPQ0?_encoding=UTF8&th=1

And the power supply seems to be removable, but how do I know if it's transferable or not?

Thanks for the help!
