I am thinking of getting on AIO, but I am a little jealous of custom loop's cool colors as opposed to the matte black tubing (which is cool, but not AS cool...). Is it possible to remove the tubing and liquid of an all-in-one and replace it with custom tubing and liquid? (Specifically the Corsair H100i)

This looks to be one way to go about it without voiding your warranty https://www.youtube.com/watch?v=Tqo_0kSqyNk although an opaque tubing should still be used for best effect
What you want to do can be done but IMO, you would be better served by investing in a custom loop and keeping the H100i as a backup for if something goes wrong (pump failure in custom loop or...)
I'll suggest looking at water cooling kits which represent a good value. I have not been able to source individual parts for less than a kit. Current popular kits include XSPC Raystorm kits, Swiftech Edge HD kits, and Larkcool Skywater kits (my personal preference is the XSPC kits)
